All About Lyon’s Famous Pink Praline Brioche, Praluline at Pralus Bakery

Pralus Bakery is home to the striking pink speckled pastry, the Praluline. You will see the infamous colorful striped bags while traveling in Lyon. Both locals and tourists carry the bags and you may be wondering what inside.

The bag contains the famous Praluline brioche. What is a Praluline? When was it invented? Can a pink speckled brioche be delicious? You may be wondering if it’s kitschy or perhaps a marketing tactic, but I can confirm it’s both delicious and beautiful.

The small costs €7.40 and the large loaf costs €13.90 – while not exactly cheap, this unique and delicious pastry is worth the price.

What is a Praluline?

The Praluline is made of a buttery brioche dough filled with Pralus Bakery’s famous pink pralines. Pralus Bakery makes their pralines in large copper pots. Then they crush them into shards and mix them into their secret brioche dough recipe.

This exceptional golden brown loaf of brioche heavily speckled with sugary pink nuts. The slightly sweet dough makes the addition of the pralines seamless.

The History of the Praluline

Its namesake, French pastry Chef Auguste Pralus, created the Praluline in 1955. Nearly 70 years later the brioche is still iconic and well-loved. The pastry was invented in the city of Roanne, which is located outside of Lyon.

Nearly 70 years later the Pralus bakery still uses the same techniques, utensils and secrets to make their beloved Praluline.

If you’re someone who wants to try the food special to a city or country that you’re visiting like Norwegian Waffels with Brown cheese or Strukli in Zagreb, then this is the pastry for you while traveling in Lyon.
